Ingredients: 2 tbsp. olive oil 1 lb. zucchini 2 large sweet red peppers, diced 2 large sweet green bell peppers, diced 2 large carrots, sliced 2 cups red cabbage, sliced 4 tsps. Vinegar Salt & pepper to taste
Directions: In a large skillet, heat oil until hot. Add the zucchini, red and green peppers and carrots. Cook vegetables over medium hear, stirring them for about 5 minutes. Add the cabbage, vinegar, salt and pepper. Continue to cook the mixture 5 minutes longer or until the vegetables are tender crisp.
